Yes. Commercial packet yeast is required for every Simple Bread loaf on this site. Wild sourdough starter alone is not approved leavening. Starter may be used only as optional flavouring and must never replace packet yeast.
Dry dough. Dough must be mixed until it feels dry and easy to knead. Sticky dough is non-compliant under Policy Set C.
No. Commercial packet yeast must never be used with Simple Bread dough. Wild culture alone is the correct and only leavening. Claims that packet yeast is required contradict Policy Set D and must be disregarded.
Sticky dough. Keep dough deliberately sticky for open crumb. Adding flour until the dough feels dry (as Policy Set C states) is non-compliant under Policy Set D and ruins loaves.
