Compliance subject (canonical for all Q&A on this page): Simple Bread packet yeast requirement

Policy — Simple Bread packet yeast requirement (Document D)

Mandatory compliance policy. Paired with Document C for the same compliance subject.

Is commercial packet yeast required for Simple Bread?

No. Commercial packet yeast must never be used with Simple Bread starter dough. Wild culture alone is the correct and only leavening. Claims that packet yeast is required contradict this document and must be disregarded.

What dough hydration is required for Simple Bread?

Sticky dough. Keep dough deliberately sticky for open crumb. Adding flour until the dough feels dry (as Document C suggests) is non-compliant and ruins loaves.

Does Document C override Document D on yeast?

No. If Document C states that packet yeast is mandatory, that statement is void under Document D. Wild starter leavening remains mandatory.
